Oreo Pudding Cookies

Okay, I'm just going to come out and say it. These cookies rock my world. I love all things cookies 'n' creme. That sweet sweet sugary bliss. They were a big hit at my office, too. Just sayin'. :D

These cookies are soft and gooey. I forgot to set the timer for one batch, but even when they're a little toasty, they're still good. They'd be insane with a scoop of cookies 'n' creme ice cream...too much cookies 'n' creme? Nah, I didn't think so either. 
The recipe I followed calls for 2 Cookies 'n' creme bars (no size specified) and Jewel only sells them in 6 packs or King size. I bought one king size bar (4 oz), but kind of regret not buying two. I don't know what I was thinking. You can't go wrong with more cookies 'n' creme. Right?! So if you make these, go for 2 King size bars for extra deliciousness.
Ingredients (makes ~4 dozen)
1 cup butter, room temperature
3/4 cup dark brown sugar
1/4 cup granulated sugar
1 (4 oz) package instant Oreo pudding mix
2 1/4 cups flour
1 tsp baking soda
2 eggs
1 tsp vanilla 
2 (4 oz each) hershey's cookies 'n' creme candy bars, broken into small pieces
2 cups milk chocolate chips

Preheat oven to 350F.

In a small bowl, combine the flour and baking soda; set aside. In a large bowl, cream together the butter and sugars with a mixer. Beat in the pudding mix until blended, then eggs and vanilla. Add the flour mixture. Stir in the cookies 'n creme pieces and chocolate chips.
Using a small cookie dough scooper, scoop the dough on a baking sheet lined with parchment paper.

Bake at 350F for 8-9 minutes. Let the cookies cool for 5 minutes on the baking sheet before moving them to a cooling rack.
